Strawberry & Pear Granola

Vegetarian. Dairy Free. Vegan. Refined Sugar-Free. Gluten Free.

Get creative and dehydrate your own strawberries and pears to use in this delicious Strawberry, macadamia and pear granola. If you don’t have a dehydrator no fear, you can usually pick up these dried fruits from a health food shop.  

BASE INGREDIENTS:
Gluten-free option – 2 cups quinoa flakes + 2 cups puffed brown rice
Non-gluten free option – 4 cups of wholegrain or spelt oats
1/2 cup of pepitas
1/2 cup of sesame seeds
1/2 cup of sunflower seeds
1 cup of halved macadamias
1/2 cup of flaxseeds
1/3 cup of coconut oil
1/2 tsp of vanilla essence
1/2 cup rice syrup
1/4 tsp of sea salt
1/2 tsp of cinnamon
1/2 tsp of nutmeg
1/2 tsp of cardamom

ADD AFTER COOKING:
1/2 cup of goji berries
1/2 cup of dehydrated or dried strawberries
1/2 cup of dehydrated or dried pears
1/2 cup of shredded coconut

METHOD:

Pre-heat oven to 180 degrees.

Melt coconut oil and whisk it with rice syrup, vanilla essence, sea salt, cinnamon, cardamom and nutmeg.

Put goji berries, dehydrated strawberries & pear and shredded coconut into a bowl and place to the side. We are going to add these after the granola has come out of the oven.

Place the flaxseeds, sesame seeds, pepita’s, sunflower seeds, macadamia’s and oats (if non gluten-free) OR quinoa flakes + puffed brown rice (for gluten-free) into a large mixing bowl, pour the coconut oil mixture over the top and mix until the liquid mixture evenly coats the seeds and grains.

Line two baking trays with baking paper and evenly distribute a layer of the granola mix on each tray. Try not to put too much on each tray as it will prevent the granola from getting a nice even golden tan. Pop the granola in a pre-heated oven for 10-20mins. When remaking this recipe in a different oven I found that cooking times varied. So instead of focusing purely on time focus on the colouration of the mix. When the mixture starts to turn golden brown after 5-10mins, give it a good mix to ensure even tanning and to prevent burning then return to the oven for a further 5-10mins Keep an eye on it as you don’t want to over do it.

Once the mixture is golden brown remove it from the oven, let it cool for 10mins on the trays to allow sections to form clusters and then stir through the hemp seeds.

And there you have yourself a delicious crunchy granola!

Serve with your favourite plant-based or dairy milk & fresh fruit, on top of choc banana ice-cream, a smoothie bowl or as a layer in a breakfast parfait

Store in an airtight container in the pantry.
