Spiced Vanilla Porridge

Vegetarian. Vegan. Dairy Free.

Porridge is one of my favourite breakfasts in winter. It’s filling and warm like a hug in a bowl… almost. If you’re on oat lover, give this spiced vanilla porridge a whirl. Its guaranteed to hit the spot on a chilly winters morning.

INGREDIENTS:
PORRIDGE:
2/3 cup of quick oats
1 tbsp of chia seeds
2/3 cup of coconut milk
2/3 cup of water
1/3 cup of rice malt syrup
1/2 tsp of cinnamon
Less than a 1/4 tsp of cardamom
Less than a 1/4 tsp of nutmeg
2/3 tsp of vanilla essence
SUGGESTED TOPPINGS:
Dried Mulberries
Frozen raspberries
Almond milk
Coconut flakes
Maple syrup

METHOD:
Add all liquids, oats, chia seeds, spices, vanilla essence and rice bran syrup into a saucepan, applying medium heat and stirring occasionally for 5-8mins until the liquid has been absorbed and the oats and chia seeds have swollen.

Pour porridge mixture into a bowl and serve with almond milk and your choice of toppings, I highly recommend raspberries, coconut flakes, dried mulberries & maple syrup.
