Smoothie Bowl

Vegetarian. Vegan. Dairy Free. Gluten Free. Serves 2.

Smoothie bowls are a refreshing breakfast, post beach snack or dessert on those warm balmy days. High powered blenders, such as the Vitamix, allow frozen fruit to be blended with great force, and the use of a tamper, into a thick, creamy all natural fruit ice-cream.  

1/3 cup of coconut milk
2x frozen bananas
1 cup of frozen blueberries
2/3 cup of coconut water
1x tsp acai berry powder
Loving Earth caramelized buckinis
Coconut flakes
Hemp seeds
Fresh diced banana
Passion fruit pulp
Frozen berries
Goji berries
Granola (find my recipe for Spiced Granola Two Ways here)
Place all ingredients in a high power blender (I use a Vitamix) and blend until all the ingredients are combined. Use the tamper to push the frozen fruit down into the blades. The finished product will be thick, with a similar consistency to ice-cream. Top with whatever you see fit – I love caramelized buckinis, chopped fresh banana, coconut flakes, passionfruit and hemp seeds or homemade granola.
