Gluten Free Porridge

Vegan. Dairy Free. Gluten Free. Fructose Free. FODMAP friendly.

Buckwheat is an excellent substitute in porridge for those who can’t have oats. Whilst the consistency is different, when cooked with a combination of comforting spices and chia seeds it is transformed into a delicious warming gluten free dish ideal for those cold winter mornings.

INGREDIENTS:
PORRIDGE:
1/2 cup of buckwheat
1 tbsp of chia seeds
1 cup of water
1/4 tsp of cinnamon
2 tbsp of rice malt syrup
1/2 tsp of vanilla essense
1/2 cup of almond milk
TOPPINGS:
Blueberries
Raspberries
Coconut
Almond milk

METHOD:
Place water, almond milk, buckwheat, chia seeds, cinnamon, vanilla essence and rice bran syrup into a saucepan on medium heat. Stir occasionally for 8-10mins until the liquid has been absorbed and the buckwheat and chia seeds have swollen. Pour porridge mixture into a bowl and serve with almond milk, blueberries, raspberries and coconut.
